Fodmap Friendly Banana Bread

A slice of banana bread

 

One of my favourite things to eat - especially with lots of cinnamon. If you're OK with a bit of dairy, milk chocolate chips can be used. Or use dark chocolate chips to make it 100% dairy-free. Make sure to use firm bananas too as ripe bananas contain higher levels of Fructose that may be a trigger for some.

Ingredients
  • 3 Bananas (firm) 
  • 1 Egg
  • 80ml Vegetable Oil
  • 130ml Almond Milk
  • 120g White Rice Flour
  • 70g Brown Rice Flour
  • 30g Potato Starch
  • 80g Sugar
  • 2 tsp Xanthan Gum
  • 1 tsp Cinnamon (optional)
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 60g Chopped Walnuts (optional)
  • 30g Milk or Dark Chocolate Chips (optional) 
Method
  1. Oil a loaf tin and preheat the oven to 170°c (fan oven). 
  2. Mash bananas with a fork. 
  3. Add lightly whisked egg and mix until just combined. 
  4. Add vegetable oil and almond milk and mix until just combined. 
  5. In a separate bowl, mix everything else - the flours, potato starch, sugar, salt, xanthan gum, baking powder and cinnamon, walnuts and chocolate if using them. 
  6. Add wet ingredients to dry and mix gently. 
  7. Pour into loaf tin and bake immediately for 50-60 minutes. 
  8. Allow to cool in tin for 15 minutes before turning onto a wire rack.
